Keeping things cool and refreshing with this Spicy Cucumber Jalapeño Margarita, it is the perfect Spring and Summer drink! Simple ingredients and simple to make. Tequila mixed with fresh lime juice, cucumbers, and jalapeños will have you coming back for more or better yet making pitchers share at your next Taco Tuesday gathering with friends.

This cocktail is beautifully simple to make. First things first line the rim of your glass with Tajin (I prefer this spice, it gives it a punch of spicy-lime flavor) but, if you don’t have Tajin, mix up chili powder, sea salt, and a pinch of granulated sugar. This rim adds a bit of fun and pizazz to your drink too, which is always lovely.

Once your glass is dipped and rimmed with your colorful and tasty spice, mix your cocktail. In a cocktail shaker, or whatever you have for mixing, muddle together thinly sliced cucumbers, a splash or…more of tequila, triple sec, a squeeze of fresh lime, and a drop of honey for sweetness. Muddle everything down until the cucumbers have released their juices, looking pretty well smashed at this point.
Toss in jalapeños, shake the mixture to infuse the drink with spice.
Pour into the glass, garnish with sliced cucumber, a jalapeño slice, and a fresh lime slice. I like to sprinkle a little of Tajin (or spice mixture you made) to the top of the glass.
This drink is supposed to be fun and refreshing. You can always use other fruits or herbs if you do not have cucumbers. Mint, or cilantro, fresh pineapple, mango, or even strawberry would be excellent in this cocktail as well.
This recipe can be doubled for you and your partner to enjoy together. It can also be made into a pitcher to share with friends (once this quarantine is over). I plan on perfecting my cocktail making abilities for when we can gather with our friends and family again!
This cocktail goes great with so many things, but my favorite combo is with a freshly made taco salad!
